Front of House Manager. Stefan joined the Swan in May 2013. He is passionate about spirits, wine, cheese and cigars. Stefan's attention to detail and creativity helps him to deliver a tailor made service with a personality.
Restaurant Manager. Rachael has been a very important and committed member of the team at The Swan since day one. She is now the Restaurant Manager and assists Lorna in running front of house. Rachael thrives in the busy and bustling restaurant.
Proprietor and Head Chef. Oliver most recently worked for Chimneys outside Catering as sous chef, before that Oliver was at The Swan in Lavenham.He spent two years travelling New Zealand and Australia, predominately working on an organic vegetable farm growing a variety of different vegetables.Oliver did his apprenticeship at Le Talbooth in Stratford St Mary
Proprietor - Front of house. Lorna has a first class Honours degree in Fine Art but when brother, Oliver decided to open his own restaurant she offered to head up front of house. Lorna's experience comes from 2 years spent as restaurant manager at the Crown in Stoke by Nayland.
Iain, Lorna and Oliver's younger brother has joined the kitchen team as a trainee chef.
